Christmas dinner hasn`t happened yet, but the gluttony of Holiday eating has definitely started for me. The past few weeks I`ve indulged in Christmas baked goods, daily chocolate from the advent calendar, cheese and charcuterie boards from pre-holiday get-togethers and more than my fair share of red wine. To top it all off, I haven`t been diligent with my yoga practice and I haven`t taken advantage of the mild weather for my typical weekend runs. It`s time to turn things around before the upcoming family Christmas dinners do me in. My smashed avocado and tomato toast is my go-to breakfast (or snack) that gets me back on track. Easy, colourful and a good digestif for what`s to come!
Ingredients
1 avocado
1 slice of toast, preferably brown or dark bread.
4-5 cherry or grape tomatoes, sliced lengthwise
Drizzle of olive oil
Sea salt
Ground black pepper
Directions
Toast your slice of bread. Slice your avocado lengthwise and remove the pit in the middle. Scoop out the inside of the avocado into a bowl and smash it up with the back of a spoon so that it`s spreadable but you still have chunks. Spread the avocado smash onto your toasted slice of bread, drizzle with some olive oil and season with the sea salt and ground pepper. Arrange the slices of tomato on top, cut side down. Optional to add another drizzle of olive oil and seasoning of salt and pepper on top of the tomato slices.
